  The 12 inch roller part # YR12243-5 that you referenced is designed to fit the CE Smith Panel Bracket # CE10305G. You would just need the roller shaft part # CE10727A which comes with pal nuts and you would be set. There isn't a stainless steel version of this available but this will resist corrosion well since it is galvanized. The roller will spin easily and would work well.   We do have some of the replacement rollers that will work for your vintage 1965 boat trailer, but we do not have some of the rollers you asked about. Thank you for the dimensions. For the very front keel roller I recommend part # YR5213-5. This measures 5 inches long and works with a 5/8 inch diameter shaft. The three center rollers I recommend are part # YR5203-5.
