    I may have a solution for you, but we don't have any Euro style drawbars with a 7" rise and after doing some digging I'm not quite sure they are available that tall . The 1-7/8" you found was incorrectly measured to the top of the ball which is why the rise was different at 6-5/8" than the 2" at 5-1/8" to where the ball is attached to the mount at the bottom.     Currently, all the Euro ball mounts we currently offer are Class II rated. Any Class II rated Euro ball mounts like # C45592 will not fit on Class I trailer hitches unless it's a Curt Class I hitch. The reason is because Class I trailer hitches are tested and rated with specific ball mounts for the hitch and if you use a ball mount not recommended by the manufacturer will void the warranty.
