Can you tell me which 5th wheel hitch and install kit I should use on my 2016 Sierra 2500 long box? Trailer weighs 16,000 pounds loaded.

First you will need an installation kit to mount the 5th wheel hitch in your 2016 GMC Sierra 2500 long bed. There are kits with rails above the bed and kits below the bed. The advantage of below the bed is that the bed is clear when the hitch is removed.
If you want to go with above the bed rails I recommend Reese custom installation kit # RP56001-53. There is no drilling required to install the frame brackets and the longer rails and outboard frame brackets make installation much easier than other rail kits.
For a trailer hitch that fits in the rails I recommend the Curt A20, # C16140. It is rated for 20,000 pounds gross trailer weight and features a cushioned head for improved ride quality. I have linked a video review of this hitch for you.
If you want to go with an under bed mount I recommend Demco kit # DM8551010. Once installed and no hitch in place your truck bed will be completely free for cargo. For a 5th wheel hitch that will fit this kit I recommend the Demco HiJacker, # DM8550032.
