Since your truck bed is occupied by your 5th wheel hitch and since there are no 5th-wheel-mount kayaks carriers I suggest you consider the cost-effective option of a foam block type carrier that can sit on your truck's cab.
This type of kayak carrier offers the advantages of low weight, low cost and easy installation. Plus it requires no permanent alterations to your truck. The carrier I recommend is the Malone Deluxe Kayak Carrier # MPG152.
This carrier includes straps to secure the foam blocks and bow and stern tie downs to secure the kayak. Please see the linked video for more information. For a little extra peace of mind you may want to add a set of ratcheting tie downs such as # EM34416 from Erickson.
Another option is to use a front-mount hitch such as # 65049 along with a load support like # EM07605. This would put much of the kayak's weight on the hitch rather than your roof and would also be a better choice if your kayak is longer than 10-feet or so.
