Question:
The only thing I will be using the hitch for is to attach a bike rack to haul one bicycle, what hitch would you recommend for this purpose? Also how do I determine if I have an Ehaust Dampner or not, if I have one is there any adittional work that needs to be done to install the hitch, Im handy with tools but not an expert

Since you only need to carry 1 bike what you could do is instead of installing a trailer hitch use a trunk mount bike carrier. This way you would only need the carrier instead of a hitch and carrier. The Thule Passage 2 # TH910XT is a popular and inexpensive carrier that is listed as a fit for your 2011 Ford Escape. I have included a link to a video review for you.
If you would rather go with a hitch then take a look at the picture I have included that shows what the dampener looks like. Whether your Escape has it or not you can install Curt trailer hitch # 13650. This is a 2 inch trailer hitch so there are many accessory options available. I have linked a video showing how it installs.
