Question:
I would like to purchase the 1 1/4 draw tight hitch but want it to be almost hidden. Some I have seen Draw-Tite hitch look excessively large when installed and do not look good. Can you advise me of hitches that are not excessively visible?

The construction and layout of the under body at the rear of the vehicle will have the most influence on how visible the hitch will be.
The hitch you were looking at, the Draw-Tite Class II for the 1999-2011 Honda Odyssey is typical of how all of the receiver hitches available for the Odyssey would appear once they are installed. Some people find the round tube hitches to be a bit more pleasing to the eye. The Draw-Tite Class III Receiver Hitch, part # 75270, is an example of a round tube hitch. This hitch is a Class III with the 2 inch receiver opening, which would provide greater flexibility in choosing accessories such as a cargo carrier or bike rack.
I have provided a link to the install video of the Class III Round Tube as well as the hitch you were looking at. I have also provided links to the installation instructions for both hitches.
The videos will give you the best idea of how the hitches will look once they are installed.
