Both the Tow Ready T-One Wiring Harness # 118409 and the Hopkins Plug-N-Tow Wiring Harness # 42615 will work on your 2000 Jeep TJ Wrangler Sport. The difference is what you mentioned, how they install to the vehicle.
The Tow Ready harness uses T-One connectors that will plug into connectors on each side of the vehicle. The connectors are located under the Jeep, behind the rear bumper. The white ground wire will need to be attached to a good, clean ground on the vehicles metal frame.
The Hopkins harness will just plug into a connector underneath the vehicle, on the passengers side, behind the rear tire mud flap. It will also have a white ground wire that will need to be attached to a good, clean ground.
They both will give you a 4-pole flat trailer connector at the rear of your 2000 Jeep TJ Wrangler Sport.
I am including a video link to the Tow Ready wiring harness being installed on a 1999 Jeep Wrangler and a link to the installation instructions.
