For your 2004 Honda Element AWD, I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver Class III - 2" # 75659. This will give you a 2 inch receiver opening that is compatible with more accessories as well as greater strength.
For your wiring, I recommend the Tekonsha T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118336. This will connect directly into your factory wiring with a plug in connector located in the rear cargo area.
For an adjustable ball mount that also stows away when not in use, I recommend the B&W Tow & Stow 2-Ball Mount - 2" Hitch - 5" Drop, 5-1/2" Rise - 10K - Black # BWTS10037B. This gives you the ability to tow level and gives you a clean look. It stows away when not in use to save your shins when loading and unloading cargo as well.
For a more economical option, you can use the Curt Channel Style Adjustable Ball Mount # C45900. I've also attached an article on finding the right ball mount if you want more options.
