Question:
The hitch on my 2011 Escape is below by rear bumper and goes in an inch or 2. With a standard receiver 2inch rise the ball is very close to the bumper. I would like to extend the distance from the bumper to avoid any rubbing. Would a longer ball mount be a better choice over an extender, for weight capacity?

A longer ball mount is always a better option that using an extender for the reason you mentioned. Using an adapter reduces trailer hitch capacity by fifty percent.
A ball mount like part # 80232 will give you 15-3/4 inches distance from center of hitch pin hole to the center of the ball hole.
For a little shorter ball mount you can check out part # BM20. This ball mount measures 13-1/4 inches from center of hitch pin hole to center of ball hole.
And for a ball mount that has 8-1/2 inches from center of hitch pin hole to center of ball mount hole I recommend part # D-26.
