I have a 2009 Cad Escalade, rated to pull 7800 lbs.I have a Venture Alum boat trailer with a 7000 total weight boat to pull. I have a class III hitch. There is a sticker on the trailer which recommends a hitch height of 22. The top of my receiver hole is 23. Is the Curt Class III 7500GVW mount and ball my best bet?

The closest you can get to level is preferred. The Curt Ball Mount # C45036 is likely going to be the closest you'll find and will work for you as long as your trailer's coupler fits a 2 inch hitch ball. If you need a 2-5/16 inch ball, instead, use # C45041.
Instead of going by the recommendation on the trailer's sticker you might take a measurement. With the trailer on level ground measure from the ground to the bottom of the coupler. The difference between this number and the 23 inches of your Escalade's receiver tube is the rise or drop you need.
