The Z71 trim package on your 2017 Chevy Silverado 2500HD 4x4 does not affect 5th wheel hitch fits but the 6-1/2-foot bed length and the truck not having the factory rail kit do affect your choice of hitch and install kit.
All custom installation kits and hitches for your truck are shown on the linked page. I recommend a custom kit (of course it costs more!) since it will reduce your drilling requirements and the overall installation time as compared to a universal base rail kit. Since the rails are made to industry-standard specs you might as well go for the least costly custom kit, the Curt # C16411-204. This base rail kit accepts any brand of sliding hitch.
I suggest a Curt hitch with a cushioned fully-pivoting head, such as 16K-rated # C16521 or 20K-rated # C16536. You definitely want to choose a hitch rated for more weight than you'll actually be towing. Safety margin is a wonderful thing.
For an in-bed wiring harness you can use # C56000.
