Are there studs that fit the Jetstream top channel that I can adjust width and use to limit a canoes travel across the bar?

You can use a set of load stops like the Rhino Rack Aero version, part # RRRLH2 to limit the canoe's travel across the bars. These handy stops include a local tie-down point so you can strap the canoe down with cam straps. There's a great locking kit available from Thule as part # TH832.
When I tested the fit onto the Jetstream, it fit, but you'll want to play with the T-bolt's height and position to get a 100% tight fit against the Jetstream's flexible rubber inserts.
If you transport the Canoe frequently and don't need the multi-use features of the load stops, you may also do well with the Swagman Exo Aero Rooftop carrier, part # S65145. This provides a hull-down loading kit for the canoe, easing the loading and unloading of the canoe.
