Question:
We have a RP66083 weight distribution setup on our F350 and LOVE it. Looking to add a similar setup to a 2000 Dodge 2500 that has a camper on it that is used to pull a horse trailer. Problem is that the camper is longer and extends the length of the tailgate out the back of the truck bed. Can you combine a weight distribution system like this with an extended hitch? If so, what parts should we be looking at?

To use a weight distribution system like the Strait-Line Weight Distribution System w Sway Control # RP66083 along with a truck bed camper, you will need a compatible trailer hitch receiver and an extension rated for weight distribution.
If you have a 2-1/2 inch hitch receiver on your 2000 Dodge 2500, then you can use the Reese Titan Hitch Box Extension for 2-1/2" Trailer Hitches, 41" - 48" Long # RP45018 or the Curt Hitch Extension and Reducer for 2-1/2" Trailer Hitches - 24" to 34" Long # C45048.
If you have a 2 inch trailer hitch receiver, then you can add the Torklift # TLD1102 to your factory hitch and use the SuperTruss extension like # TLE1536. I've attached the link to all your options for length.
These are really the only options I can offer for your specific application. TorkLift also has wiring extensions to match the length you need like # TLW6036
