The Convert-A-Ball Cushioned 5th-Wheel-to-Gooseneck Adapter # CAB-C5GX1216 that you referenced has a 12" - 16" height adjustment.
I spoke with my contact at Convert-A-Ball who said that the top portion adjusts 2" and the bottom portion adjusts 2" and the 12" - 16" height is measured from the top of the gooseneck hitch ball to the bottom of the king pin plate.
