will this harness locate from factory connectors to the hitch externally without going through the inside of the vehicle?

You will need to access the tail light wiring harness of your 2011 Hyundai Santa Fe that is in the interior of your vehicle.
Once installed the connector will stay outside of the vehicle and near the hitch. You will not need to store it on the inside of your vehicle when not in use.
