What I would do with the Convert-A-Ball Cushioned 5th-Wheel-to-Gooseneck Adapter # CAB-C5GX1216 is loosen the set screw that holds the inner coupler tube in, remove the coupler, and store it in a locked vehicle or other location. If the coupler part isn't there no one could come along and steal the trailer!
Traditional gooseneck coupler locks won't work on this adapter so if you want to go with a more traditional method than what is described above I recommend the Super Grip chock # UF21-001090. Once this is in place between the 2 wheels you can lock access to the nut used to open and close the chock. This will prevent the tires from turning on that side of the trailer.
We also have wheel locks such as # WI491-491LNP. This style will prevent someone from removing the tire to defeat the lock. I have linked videos on the 2 locks mentioned above.
