Question:
Will this product work for the Class V 2.5inch hitch on my 2017 F250? Its a 4WD so I have typically used a good amount of drop when towing with a regular ball. What sort of tow height is typical for towing with the pintle hook? If is required, is there a product with at least 15K capacity that wont break the bank?

The Curt Pintle Hook for 2-1/2" Hitches - 20,000 lbs # C48010 will work for the Class V receiver but if you normally have a decent drop, you will want to still have a drop. The typical trailer coupler height of 17 inches from the ground to the bottom of the coupler is similar when using a lunette ring and a pintle hitch.
My recommendation for your application is the Buyers Products 3 Position Pintle Hook Mount for 2-1/2" Receiver - 20K # 337PM25812 along with the Buyers Products 15 Ton Pintle Hook # 337PH15 (30K). The combination will be maximized at the lesser capacity, so the max towing capacity would be 16,000 lbs or 20,000 lbs for these two combinations.
