Since your 2016 GMC Sierra 2500 has a short bed you need to use a sliding 5th wheel hitch. With a sliding 5th wheel hitch you don't need to worry about using an extended pin box as the hitch will slide back far enough for you to have proper trailer-to-cab clearance for tight turning situations.
I recommend using the B&W Companion 5th wheel hitch because it is rated for 20,000 lbs, features a cam-action latching handle that keeps the dual jaws from binding which makes it much easier to release on uneven ground, and it is made in the USA with a limited lifetime warranty so you can be confident in the quality of the hitch itself. If you have the OEM puck system on your Sierra then you need part # BWRVK3770 but if you don't have anything installed on your pickup then you need the Gooseneck Hitch # BWGNRK1016-5W and the Companion # BWRVK3400-5W instead.
