2018 ram 2500 4 4 off road edition. Hitch height 25 1/2. Should I go 8 inch or 10inch hitch? THANKS

I'd go with the 10 inch drop version of the Weigh Safe part # WS10-25 that you referenced. It's pretty common to see trailer coupler heights around 15 inches and this would get you a drop right at that height. It's possible you wouldn't ever need that much drop but if you are buying an adjustable ball mount to basically cover all possibilities you may as well get one you know is going to work for everything.
