Question:
How accurate/dependable is this reciever hitch? I have a motorcycle that weighs 480lbs, and a carrier for it to attach to the hitch weighs around 100lbs, so 580lbs total. is that safe to have on this 600lb tongue weight receiver for extended trips?

The etrailer.com Trailer Hitch Receiver part # e98847 does indeed have a 600 lb tongue weight capacity and it will hold this much. However, trailer hitches are tested separately of the vehicle which means if the vehicle is rated for less tongue weight then that is actually your limit. If you take a look on page 8-23 of the owner's manual for a 2014 Subaru Outback Wagon you will see that the max tongue weight capacity is 200 lbs.
Therefore, the only way you will be able to safely haul your motorcycle is on a trailer like the Detail K2 Mighty Multi Utility Trailer part # K2MMT4X6. In which case you would also need the T-One Vehicle Wiring Harness part # 118467 and the Ball Mount Kit part # 989900.
