Can I cut the excess bolt once the rack is properly tightened down...with out voiding the warranty?

If you were to cut the ends of bolts on the mounting clamps for the Erickson Truck Bed Ladder Rack part # EM07705 that would likely not void the warranty. That said, once you cut the bolt end it no longer has a coating to protect from rust so it will degrade much faster. Therefore, you would need to put some paint over the exposed metal as that would then solve this issue.
