Could I use an adapter to plug a temp gauge into one of the in plugs to pull a temp reading from this?

In order to obtain an accurate reading of the vehicle's engine oil temperature you would need to pull this data while the oil is in the pan using a sensor such as the Derale Temperature Gauge Kit for Transmission or Engine Oil part # D13009. If you were to monitor the engine oil temperature before or after the filter then this would not give an entirely accurate figure as to the vehicle's true engine oil temperature. That said, if you still wanted to proceed then you can indeed use some sort of flow-through engine oil temperature sensor with the Derale Remote Oil Filter Mount Kit part # D15709 although we don't have any options specifically for this.
