To answer the most basic part of this question first, you are correct that only Class I hitches with 1-1/4" receivers are available for your 2007 Honda Accord, but if your weight estimates are correct, they will be sufficient to handle this job.

I did some research and according to the owner's manual of the 2007 Honda Accord, it has a 1000-lbs towing capacity; it also looks like your Yamaha YZF R1 has a wet weight of around 450-lbs. As long as your total weight of trailer and bike stay under 1000-lbs you'll be able to use your 2007 Accord sedan to tow this setup, but you'll need to be mindful of the tongue weight, since your vehicle is only rated to handle about 10% of the total trailer load on the tongue. To get an idea of what your trailer's loaded tongue weight is, you'll want to use a tongue weight scale like the etrailer # e99044 to make sure you're not more than 100-lbs (based off 10% of the 1000-lb total).

For the hitch, I recommend using the Draw-Tite # 24787 because it is the only hitch available for the 2007 Accord that doesn't require any drilling into the frame and therefore is going to provide you with an easier installation process compared to the other hitches available for your vehicle.

You'll need to a couple more things to complete your towing setup for your vehicle- wiring, a ball mount and hitch ball. For wiring, I recommend the Tekonsha T-One Wiring Harness # 118302, which connects behind the tail lights on your car and will provide a 4 way trailer connector to work the lights on your trailer. For a ball mount you'll want to use something like the Draw-Tite Drawbar for 1-1/4" Hitch # 3592 and a hitch ball with a 3/4" shank diameter like the # 19254 (1-7/8" ball). I've linked all of our hitch balls with 3/4" diameter shanks to this answer to help you locate which ball will work best with your trailer coupler- 1-7/8" or 2".

In addition to these parts, I've also attached some installation videos and a copy of the page on your owner's manual that talks more about the towing and tongue weight capacity of your vehicle.
