There are a few different wiring harnesses available for my 2020 Honda Odyssey, what is the difference between them all and which one should I use?

I can see why this might be confusing and there are some differences between all 3 of these wiring harnesses. I'll start off by explaining the differences between the Tekonsha # 118781 and # 118753 wiring harnesses. The main difference is that the # 118753 is designed for vehicles that do not have the towing fuses already in place.
In order to determine which one you can use on your 2020 Honda Odyssey you'll need to check the rear interior fuse box, which is located on the left side of cargo area to see if fuse locations #10, #11 and #12 are pinned (terminals present). If so, you can use # 118781. Otherwise, if the fuse locations are not fully pinned, you will need to use # 118753.
The Curt # C56382 is going to be comparable to the Tekonsha # 118781, but the Tekonsha # 118781 does have some advantages over the Curt # C56382. First, the converter boxes on the Tekonsha wiring harnesses are traditionally a bit more reliable and in turn have shown to last longer than the Curt boxes. Additionally, the Tekonsha harness does feature a higher amp rating (max 5 amps for stop/turn circuits and 7.5 amps for tail lights compared to 3 amps and 6 amps respectively on the Curt), which just offers a stronger system that's able to take a bit more power.
As long as your 2020 Honda Odyssey has the towing fuses already in place, the # 118781 is going to be a much better choice in terms of the amp rating and the reliability of the converter box on the system.
