Question:
I am looking at a 2019 Audi Q7 but there are very few available with the tow package installed. The dealers are telling me an aftermarket hitch will have a reduced towing capacity of approx 6000 lbs from the original rating of 7700 lbs. regardless of the hitch I use. Is this true?

The capacity of a towing system is limited by it's lowest rated component. There are hitches in our lineup rated for more than the 6,000 lbs referenced, such as the Draw-Tite Max-Frame Trailer Hitch Receiver # 76076 so as long as the 2019 Audi Q7 is capable of towing up to the hitch maximum of 7,700 lbs of Gross Trailer Weight on the Draw-Tite and the other components like the ball mount, ball, etc. are rated for the job, towing capacity shouldn't be reduced.
