Question:
2011 RAM 2500 4WD mega cab W/ 6.7 diesel. Pulling gooseneck horse trailer with about 10K unloaded and 14K loaded. What set of Timbrens should I get for the rear the 6K or 8K ones?

In your case I really like the Timbren Rear Suspension Enhancement System part # T94VR these have the 8K capacity which will help to take a lot of the stress and strain off of that rear suspension set up. Towing 10-14k can cause wear issues relatively quickly and these will do a great job reducing that drastically for you.
If you were in the 5-10k or lower towing range I would lean to the lighter versions part # TDR2500CA these also do a great job of taking the abuse so the suspension doesn't but with your heavy demands the 3500's are going to be the way to go.
