Can you recommend a 5th wheel hitch set up from Curt, I just purchased a 2020 3500 GMC. The truck DOES NOT have the factory puck set ups and I will need to install a bracket system around the factory rails. The camper I tow is 16,500 Keystone Montana. I have searched the following hitch set up 16191 30 K hitch 16429 frame rail brackets is there any thing else I need?

The correct Curt rail kit you need for your 2020 GMC Sierra 3500 long bed without the OEM rail kit is the part # C16429-204 so that you can install a Curt hitch like the very well designed A20 part # C16140 which has more capacity than you'd need and has the best jaw design Curt has come up with which gives you a quiet and very secure ride quality. These two part numbers would be all that you'd need.

Would the C16180 hitch also work ok if I wanted some added protection for safety

Yes the Curt A25 hitch part # C16180 would fit and work really great. It will give you 5k of additional towing capacity.
