That's a Blue Ox base plate kit you have installed on your 2017 GMC Canyon so you'd want to use a Blue Ox Tow Bar like the Avail part # BX7420 which is one of the best and easiest to use options out there. Some tow bars are hard to connect/disconnect to and don't allow the vehicle to track well behind the tow vehicle but the Avail does a really great job with this.

To connect the lighting solution you have now on the truck you'd need a coiled 7-way to 4-way round like the part # HM47043. I can see you have a breakaway system mounted next to the wiring connector so we'd need to determine what system you have installed on your vehicle first to determine what you'd need in the motorhome. Can you trace the wires and look for a supplemental braking module on the truck and let me know?
