Question:
I would like to add a 7 PIN RV trailer connector to my 2019 Subaru with a Curt Trailer Hitch Receiver - Custom Fit - Class III # C67JR. I have a 4 way from etrailer installed that I simply snake out the hatch when needed. My intent is to relocate the connector through the tire well and use to power the 7 - PIN. I have reviewed your connector options and watched a couple of videos but see no way to attach a connector to the hitch or the car. Any advice would be welcome.

I understand the frustration, manufacturers are making hitches more hidden and sleek. It's nice having the cross bar hidden, but it does make it challenging to mount wiring because that's the traditional spot.
You can route the 4 pole wire out to the bumper through a grommet that is under the spare tire. I have done that many times to get the wires out towards the hitch, you'll just want to make sure the wire is protected and to seal the grommet up with some silicone # LT37467. You can see where the grommet is with the attached photo.
If you want to upgrade your trailer connector to a 7 way just for light functions, I recommend Mighty Cord Trailer Connector Adapter # A10-7084VP. Your existing wiring will plug into the back, and provide all the lights to get down the road safely. This is just the adapter, so no additional connectors or wire is included to install a brake controller.
If your trailer has brakes and you plan on using a brake controller, I recommend the 7-Way RV Upgrade Kit for Trailer Brake Controller Installation # ETBC7L. You'll have all the light functions, and a 12V power source so that you can use an alternative style brake controller like the Curt Echo Wireless Trailer Brake Controller # C51180. It comes with all the required connectors, wire and hardware to get installed and will provide a 7 way and 4 pole connector on your Outback.
You can use the Curt Easy Mount Bracket for 4- or 5-Way Flat and 6- or 7-Way Trailer Connectors # C58000 to mount your wiring. The bracket mounts to the hitch collar so the fact that the cross tube is hidden doesn't effect how it mounts. I included a video of a different car so you can see how it attaches along with a photo that a customer sent in of their Subaru Outback Wagon.
