The Derale Series 8000 Plate-Fin Transmission Cooler Kit part # D13501 is my recommendation for a 2018 Subaru Outback Wagon. It will do a great job of reducing the transmission fluid temperature when towing in any climate. It should be the perfect size for the available space in front of the radiator and behind the grille.
I do not recommend any sort of thermostat bypass for this application.
