I have a 5th wheel RV, the plate on the 5th wheel states it is Leland P/N AF 7920. I need help with information to purchase the correct 5th wheel hitch for my 2016 F150 Super Crew, this is the short bed 57.

For the 5 foot 7 inch bed, you'll need a Reese Sidewinder rotating pin box to provide sufficient clearance between the front of the 5th wheel and the truck cab. The Reese # ST400-5AS16K you'd looked at is indeed the correct replacement that would be compatible with the bolt pattern of your existing Leland 7920 pin box.
For a hitch, I'd recommend the Reese M5, part # RP30928 for a 20K capacity. The M5 features shock-dampening technology and the always-ready Talon jaw. For an install bracket/rail kit, use # RP50087-58.
The Sidewinder includes a universal wedge.
Finally, if you'd care to install a 7-way connector in the truck bed so you don't need to run the trailer connector cable up over the tailgate, you can install one using part # 20110-010
