I may have an option for you, but there is not a 7" extension that fits a 2-1/2" trailer hitch receiver and takes 2-1/2" accessories.

The closest option is the Brophy Hitch Reducer and Extender - 2-1/2" to 2" Trailer Hitch - 7" Long # HR26 which will fit your 2-1/2" receiver, is 7" long, but is also a reducer so it only takes 2" accessories. This option will reduce the capacities of your trailer hitch receiver by 1/3.

If you are needing an extension that has a 2-1/2" opening at the end the shortest option we have is the # C45048 which can be cut down to 24".
