Once the trailer hitch is installed, how do you access the spare tire?

The Draw-Tite Trailer Hitch # 36511 that you referenced does not require you to access the spare tire differently than you normally would. If you check out the picture I attached you will see that the hitch does a good job of not interfering.
If anything you might need to angle the spare in and out to get it around the cross tube of the hitch but that should not be too difficult.
