Hi, I am considering this platform rack for our 2020 Nissan NV 3500. Besides cargo, are there other attachments that I can use with the platform such as kayak or bike mounts?

With the Rhino Rack Pioneer Platform Rack part # RR73QX that fits your 2020 Nissan NV 3500 you can basically attach any roof mounted accessory that is designed to attach to the top channel of a crossbar to it but also there is the crossbar attachments part # RR43138B which can give you a traditional set of bars as well. For a kayak carrier you could use the Thule # TH834 as well.
