Question:
Im having an OEM Toyota hitch installed and will need both 4- and 7-pin wiring. Ill also need a wireless brake controller. What parts do you recommend? If Im using a wireless controller does that change the install? Would it make sense to wire the brake controller if I decide to install it down the road?

For your 2021 Toyota Rav4 the best way to install a 4-way/7-way and a brake controller will be to first start with a 4-way like the part # 118801 which is very easy to install and very reliable and then to convert to the 7-way you'd just want the part # ETBC7L which was designed specifically for this type of application. It activates only the circuits needed for a wireless brake controller which is basically just the 12 volt accessory circuit along with the trailer lighting functions.
Then for a brake controller the easiest solution is the Curt Echo Wireless part # C51180 which once plugged in would just need to sync to your smart phone and would be ready to tow with. Without a standard brake controller to wire up there really isn't a way to do the wiring for if you were to install a brake controller.
