There is not going to be any interference to any of the rear sensors of your 2021 Subaru Outback with the installation of the Curt Trailer Hitch Receiver # C67JR.
Everything will continue to work as normal with the hitch installed.
Along with the hitch, if you plan on doing some towing you'll also need a trailer wiring harness; the correct harness for a 2020 Outback is the T-One Vehicle Wiring Harness # 118467.
