The best option for a high-capacity sliding 5th wheel hitch that can be removed when need on your 2018 Ram 3500 is an option from Curt, and I'll also list out the proper base rail and install kit for your Ram in case you also need those:

The Curt # C16566 has a 24,000 lb capacity and you can remove the pins in the head easily to take it out in two different pieces. This will definitely make the removal of the hitch easier, but it is still likely a two-person job because of how heavy all sliding hitches are. But being able to take the hitch apart in pieces makes it manageable, as others won't allow that and you'd have to find a way to lug the entire hitch out of the bed at once.
Along with the Q25 being the best option for removal, it's also just a really good 5th wheel hitch. It has a head that moves 350 degrees (most just pivot from side to side), and a dual jaw system that completely encompasses the king pin; these are important because combined they ensure there is means less movement of the king pin inside the jaws for a smoother, quieter ride than other hitches.
The Q25 # C16566 is also easy to use because of its color-coded indicator system, which is visible from your truck and lets you know if the jaws on the hitch are ready to couple, uncouple or tow.
