I am moving cross country. It appears the most cost efficient option is to drive and hitch a trailer. My car didnt come with a hitch, so how do I add that?

In order to add a hitch to your 2022 Ford Escape you will want to start with buying an aftermarket hitch like the ones we carry here at etrailer. Once you have the hitch, you can have a local installer put it on for you, or you can install it yourself. For a hitch for towing with your 2022 Ford Escape I recommend the etrailer Trailer Hitch Receiver # e89YR.
This is a custom-fit Class III hitch with a 2" receiver. It has a concealed cross tube so only the receiver will be visible at the back. What sets this hitch apart from others is the matte black powder coat finish. This provides more of an OEM look while also doing a better job of hiding dirt and scratches when compared to a glossy finish.
Since you will be towing a trailer you will also need wiring. The most reliable wiring harness will be the Tekonsha T-One Vehicle Wiring Harness # TE54FR. This plugs into existing wiring, providing you with a 4-way to power your trailer's signal lights.
In order to complete your setup you will also need a ball mount. Check out the etrailer Ball Mount Kit # 989900. This kit has two ball mounts, one with a 3/4" rise or 2" drop and the other with a 2-3/4" rise or 4" drop. It also comes with a 1-7/8" and 2" ball, as well as a ball mount bag to store everything in.
