What kit installation kit would I need to install my Curt R5 slider hitch in my 2007 Dodge 3500 5.9, 8 foot bed?

For your 2007 Dodge Ram 2500 long bed you can use Curt installation kit # C16420-204 that you referenced. The rails that come with this kit will accept Curt, Draw-Tite, Hidden Hitch, Reese, Valley, and Husky 5th wheel hitches, fixed and slider, that fit in above the bed rails. I have linked the instructions and a video showing a typical installation for you.
To add in-bed trailer wiring you can use # HM42137. This will make connecting the 5th wheel trailer electrical connection easier.
