I have a 1997 2000 lbs 4x8 Fair West utility trailer a gross weight of 2300 lbs with 26-1/4” long by 1-3/4” wide 5 leaf slipper springs my question is can I switch to double eye and what modifications and parts I need for my trailer

Yes, you can change from 1-3/4 inch slipper springs to double eye springs on your trailer. You will need to have the slipper end hanger removed and have a new hanger welded on which allows the leaf spring to sit at the same height. Or you could replace all of your hangers with a brand new kit if you like, and I have added a link below to our entire selection of hangers and hanger kits for you.
Then you just need the leaf spring and bolts, and for your 26-1/4 inch springs I recommend a 26 inch spring because leaf springs elongate a bit over time. So you can use the following:
